Recipe for one quiche:
1 puff pastry or short-crust pastry
100g bacon, diced
1 leek
½ onion, diced
4 eggs
250ml crème fraîche
Salt and pepper
Transfer the pastry to a quiche mold and poke all of its surface with a fork.
Sauté the onion, thinly sliced leek, and bacon in some butter and sprinkle it over the pie crust.
Whisk together the eggs and crème fraîche until smooth. Season with salt and pepper, then pour the mixture over the bacon, onion, and leek.
Bake the quiche at 180°C bottom/top heat for about 35 minutes, or until golden brown.
